Lactobacillus bulgaricus: The Classic Yogurt Probiotic, Explained
A layman-friendly look at Lactobacillus bulgaricus — the century-old yogurt strain — and what the science says about lactose digestion, gut barrier and immunity.
What is Lactobacillus bulgaricus?
Lactobacillus delbrueckii subsp. bulgaricus is one of the two classic yogurt-starter bacteria (alongside Streptococcus thermophilus). It is a lactic-acid-producing strain first characterised by Bulgarian scientist Stamen Grigorov in 1905, and has since become one of the most extensively studied probiotic species in the world.
Why it matters for gut health
L. bulgaricus ferments lactose into lactic acid, lowering intestinal pH and creating an environment that is inhospitable to many pathogens. In doing so it supports:
- Lactose tolerance — the bacterium's own lactase activity helps break down milk sugar, easing symptoms in people with lactose maldigestion.
- Short-chain fatty acid production — feeding the colonocytes that line your gut wall.
- Barrier integrity — helping maintain tight junctions between gut cells.
What the science says
A Cochrane review of probiotic yogurts containing L. bulgaricus found consistent improvements in lactose digestion versus milk controls. Randomised trials have also shown modest reductions in the duration of acute infectious diarrhoea and improvements in stool frequency in constipation-predominant IBS when consumed daily for 4+ weeks.
Emerging research suggests L. bulgaricus may modulate the immune system by increasing IgA production and regulating inflammatory cytokines, though most trials have used it in combination with other strains, so isolating the effect is difficult.
How to take it
Typical clinical doses range from 1–10 billion CFU/day. Look for products that guarantee CFU counts through end of shelf life — not just at manufacture — and store as directed.
Safety
L. bulgaricus has a long history of safe use and "generally recognised as safe" (GRAS) status in food. People who are severely immunocompromised or have central venous catheters should consult a clinician before starting any probiotic.
